Interactive Salinity & Brine Calculator

Eliminate mold and spoilage by establishing the precise osmotic pressure needed to allow lactic acid bacteria to thrive while suppressing putrefactive pathogens.

Input Batch Parameters

Net weight of trimmed vegetables without vessel.
Filtered, chlorine-free water required to cover vegetables.
Standard range: 2.0% (Fast krauts) to 3.5% (Peppers/Hot sauces).
Total Required Salt (NaCl): 37.5 g
Calculated Batch Mass: 1500 g

Recommended Salinity Targets

Different vegetable densities and water contents demand calibrated salt barriers. Refer to our laboratory standards:

Produce Type Recommended Salinity Notes
Shredded Green Cabbage 2.0% – 2.25% Extracts ample natural cell water; no added liquid needed
Napa Cabbage (Kimchi) 2.2% – 2.5% Balance crunch retention and garlic-chili absorption
Pickling Cucumbers 3.0% – 3.5% (Total) High water content demands higher salt to prevent softening
Chili Mash (Hot Sauce) 3.0% – 4.0% Ferments slowly over months without mold formation
Root Vegetables (Carrots, Beets) 2.5% – 2.8% Retains crisp cellular crunch over extended fermentation
Salt Quality Mandate: Never use table salt containing sodium ferrocyanide (anti-caking agents) or potassium iodide. Use pure fine sea salt, pickling salt, or kosher salt with 100% sodium chloride purity.
